Hi everyone! Nicole here subbing in for Matt today. While he has been in and out of several kitchens over the past few weeks, he’s been very busy and successful in the sales department. I am by no means any writer like he is. I am also no chef either. But I love food and I love to cook. I will briefly blog about my dinner last night, and I apologize I have no pictures but with 2 small kids running around, I’m lucky enough to even get a home cooked meal on the table.
First up- Hot Italian Sausages grilled on high heat to crisp up the outside, finished in oven to cook inside. Served on a Boulart Ciabatta Sandwich roll- see picture.
Second- sautéed onions in extra virgin olive oil on medium high to brown a little and caramelize, added in button mushrooms, garlic and then deglazed the pan with sherry vinegar. To die for…
Third- one of my favorite vegetables, Asparagus. Too simple- sautéed in extra virgin olive oil with kosher salt and crushed black pepper. That’s it. Sometimes I squeeze a little lemon juice and add lemon zest too.
Lastly- baked Mccains smiley French fries so my almost 3 year old son would enjoy dinner.
The best part of dinner, my husband cleaned the whole kitchen.
Have a great weekend!
Nicole
